double chocolate chip cookies....

These are possibly my favourite homemade cookies, they not only taste good, they look bought when baked and you get a load of cookies from one batch.
It's an all round winner in my mind.


DOUBLE CHOCOLATE CHIP COOKIES

Serves 30 (if you don't eat lots of cookie dough)

Ingredients

125g butter
1 cup brown sugar
3/4 cup caster sugar
1 teaspoon vanilla essence
1 egg
1 1/2 cups self-raising flour
1/2 cup cocoa (the richer the better)
3/4 cup dark chocolate chips (get the chunky ones)

Method

1. Preheat oven to 160 C
2. Cream the butter and sugars together until light and fluffy
3. Mix in vanilla essence and egg
4. Stir in flour and cocoa
5. Add the chocolate chips
6. Place teaspoons of mixture on greased baking tray and bake at moderate oven for 10-15 minutes.


Yum...now sit down with a cup of coffee and enjoy a warm chocolate chip cookie, two!
